Ingredients/材料:
Bread flour 650g (or subsitute 100g with wheat flour or rye flour)
Water 300g
Milk powder 25g
(or 325g milk)
Sugar 25g
1 teaspoon active dry yeast (3g)
Salt 10g
Steps:
Put the above into the bowl (below) and let it roll for 10 minutes with the standmixer. If it is too dry, ok to add some water/milk. But basically it is a dry dough.
Kneading a bit with hands, shape up and grease the bowl with some olive oil. Cover and let it raise to 1.75 times the size before putting it into the refrigerator overnight.
Let it raise for an hour. This is the second fermentation, so no rush.
Prepare boiling water with a few teaspoons of molasses.
Boil one minute on each side, then dip into sesame seeds if you want.
Bake 7 minutes at 425degree F then flip for another 7 minutes.
