香蕉蛋糕 (無泡打粉)

Originally from Carol 自在生活, I made some minor adjustment, e.g. less butter, less sugar. This is an extremely simply recipes. Can be done in less than 5 min.

Ingredients :

2 egg (about 120g) in a few degree above room temperature (this is the key for a puffy cake)

40g caster sugar

30g unsalted butter or vegitable oil or yogurt

100g cake flour

1~2 ripe bananas  (about 120g~150g)

Instruction:

Mix butter/oil/yogurt with flour and bananas. Put eggs and sugar in a bowl, beating up, then blend into the banana mix lightly. Pour into mold.

Preheat the oven to 170°C (338°F), bakes for 28~30min until cooked (test the inside).


You may add some cranberries or raisins on the top if you want. It would be nice too.
