Japanese Croquettes (Korokke)/日式可樂餅


Croquette is French/法語, from verb 「croquer」, meaning 'to crunch' (從動詞變化而來的,意思是咬下酥脆的食物時,齒間所發出的聲音。) . 
Mainly two parts to make croquettes, 1st potato and meat mixture; 2nd coating, fry and serve.

Part 1: Potato and Meat Mixture - Not necessarily meat, vegi is ok.
1 lb russet potatoes (450g, about 2 potatoes; Russet potatoes are better in texture)
1 onion
1/2 lb ground beef or pork (200g)
1 corn
½ tsp salt (for meat)
¼ tsp ground black pepper (for meat)
1 Tbsp unsalted butter (for potato)
¼ tsp salt (for potatoes)

Steps:
1. prepare meshed potatoes by steaming.
2. chop onion into pieces, pan fry onion, corn and meat with salt and pepper; need fully cooked.
3. combine the above two into oval shape balls.

Part 2: Panko Coating
½ cup all-purpose flour (30g)
1 large egg
1 cups panko (breadcrumbs) (30g)

Steps:
4. coat the potato balls with flour (a thin layer).
5. soak in beaten egg for a second, then coat with panko.


Part 3: Frying
  I don't like deep frying, so I pan frying a bit, then bake in the oven for 8 minutes. If you deep frying, then no need to bake again.

Part 4: Serve
Tonkatsu sauce, hot and sweet sauce (甜辣醬), or anything you prefer.
