Cranberry orange muffins

 


Cranberry orange muffins 10~12 cups

Ingredents:



3 Eggs (about 150g) - yolk and eggwhite separated.



Sugar 40g - this goes with the eggwhites



Milk 100ml



Sugar 40g - this goes with the dry ingredents



Cake flour 200g

Vegetable oil 30ml



Baking soda 3g

Salt 2g

1 orange and half lemon about 30ml



Dry cranberries 50g

Instructions:




  1. Prepare
    cranberries - soak in warm water or rum for at least 10 min

  2. dry
    ingredients: flour 200g, baking soda 3g, salt 2g, sugar 50g,
    orange/lemon zest and cranberries

  3. add
    wet ingredients: egg yolks, milk, orange/lemon
    juice 30ml, oil 30ml

  4. add
    beaten eggwhite and sugar, stir together gentlely, pour into paper cups.
5. bake
at 200 degree C for 20min, lower to 185 degree C for another 5~8 min just
to make sure it is fully baked.
