Banana oatmeal cookies

 

With some leftover oatmeals and bananas, let's make some cookies.

Ingredients

butter, softened 90g (or half butter and half salad oil)

brown sugar 45g (or a bit less for the sake of good health, say 30g)

castor sugar 45g (or a bit less for the sake of good health, say 30g)

1 egg (or 50ml milk)

1~2 mashed bananas

cake flour 100g

1 teaspoon cinnamon powder

1 teaspoon baking soda

instant oatmeal 100g

Instructions

Preheat oven to 350 degrees F (185 degree C). Line cookie sheet with parchment paper.

Using an electric mixer, cream together butter, brown sugar and castor sugar.

Mix in liquid (egg or milk) and mashed bananas.

Mix in flour, baking soda and cinnamon until combined. Stir in oatmeal. You may notice it is kind of dry. It's ok to add some milk. But as you stir, the moisture would come together eventually.

Lay mixture on cookie sheet flat.

Bake for approximately 25~30 minutes. Remove from oven and let it cool on wire rack. Then cut to the size you want. I did 16 pieces of snack bar-like shape. Each is about 5.625gram of sugar. If you reduced the volumn of the sugar, it could be 3.75gram a piece! Recently I only added half the amount of sugar with larger portion of bananas. And even skipped the oil entirely. if it is dry, add some yugart. Bananas usually provides enough liquidity. 

If you run out of banana, sweet potato (yam) is ok too. Need to steam them first though. Usually I add cranberries to provide some berry flavor.

Add some rasins is ok. Some almond slices on top before baking is great too.
